Breakfast Enchiladas with Kale Chip Topping

 Ingredients:

Preparation Instructions:

Sauté onions, garlic, and tomatoes in oil
Add sauce to sautéed vegetables and simmer for 10 minutes
Blend all ingredients together
Scramble eggs with chives
Dice bell peppers and sauté in oil
Brown tortillas in oil
Roll tortillas filled with eggs & peppers and lay in baking dish
Cover with sauce
Cover with cheese
Drizzle more sauce
Bake kale with oil and salt at 350 for 10 minutes
Bake enchiladas at 350 for 20 minutes
Crumble kale chips and sprinkle on top of enchiladas
Enjoy!
