With just a little prep the night before, this recipe makes it easy to wake up to a warm, delicious breakfast. Lighter than oatmeal and packed with complete protein, quinoa will give you sustained energy for the day.
1 cup Alter Eco Red Quinoa
2 cups cold water or apple juice
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon/pinch cardamom
Makes 12 muffins Ingredients 1 ¼ cup plain flour1/2 tsp salt 3 tsp baking powder ½ cup Fair Trade caster sugar (or extremely fine granulated sugar) 1 egg, lightly beaten ½ cup milk 2/3 cup plain yogurt 3/8 cup butter, melted and cooled 1 tsp finely-grated orange rind 1 bar Divine Orange Milk Chocolate Bar, chopped into chunks
