Once referred to by the Incas as the “mother of all grains,” quinoa is one of the most complete nutritional superfoods on Earth. Originating in the Andes region of South America, it contains an exceptional balance of amino acids, vitamins, and minerals. Quinoa and Black Bean Pilaf with Lime-Cumin Vinaigrette
I used leftover sautéed green beans and the dish came out great, though I’m sure any precooked green will do.
1 1/2 cups white or red Fair Trade quinoa, picked over, rinsed and drained
3 cups of water
1 1/2 cups cooked black beans, rinsed, drained, and quickly blanched for 1 minute
1 1/2 cups leftover cooked greens (dino kale, broccoli, green beans)
4 scallions (about ½ cup), chopped
For the Dressing:
1 teaspoon sea salt
1 1/4 teaspoons ground cumin, or to taste
1/3 cup olive oil
In a medium saucepan, combine quinoa, a pinch of salt and water and bring to a boil then reduce to a simmer for 16 minutes.
Transfer quinoa to a large bowl and cool. Add black beans, greens, and scallions.
In a small bowl whisk together lime juice, salt, and cumin. Add oil in a continuous stream, making sure to continue whisking. Drizzle the dressing over salad and toss well with salt and pepper to taste.
